Whoopie Pies Recipes

I caught this on Martha Stewart this week and thought I would share (O' fattining! but O' Yum!!!). You can even make them for Halloween classroom treats with a pumpkin filling or a peanut butter filling:
IngredientsMakes 10


1/2 cup (1 stick) unsalted butter, preferably organic, room temperature, plus more for muffin pans

2 cups sugar
1/2 teaspoon fine sea salt
2 large eggs
1- 1/2 teaspoons pure vanilla extract, preferably organic
1 -1/2 teaspoons baking soda1 cup buttermilk, preferably organic
1- 3/4 cups all-purpose flour3/4 cup cocoa powder3/4 cup boiling water
Normal White Whoopie Pie Filling:
IngredientsMakes 3
3/4 cups
1 cup (2 sticks) unsalted butter, preferably organic, room temperature
2 cups sifted confectioners' sugar
1 jar (7 1/2 ounces) marshmallow Fluff
2 teaspoons pure vanilla extract, preferably organic
Filling Directions:In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until pale and fluffy, about 3 minutes. Add Fluff and vanilla and continue mixing until well combined.

or PEANUT BUTTER filling:
Makes about 1 cup
2/3 cup natural, creamy peanut butter
8 tablespoons (1 stick) unsalted butter, softened
3/4 cup confectioners' sugarFine salt (optional)

Cream peanut butter and butter in the bowl of an electric mixer fitted with the paddle attachment on high speed. On low speed, mix in sugar until combined, then beat mixture on high speed until fluffy and smooth, about 3 minutes. Add salt to taste, if desired. Use immediately

or PUMPKIN filling:

4 ounces cream cheese, at room temperature
1/2 cup (1 stick) unsalted butter, at room temperature

1/2 cup confectioners' sugar
1/4 cup canned solid pack pumpkin
Pinch of cinnamon
Pinch of nutmeg

Main Recipe Directions for the cake batter: Preheat oven to 350 degrees. Butter two 4-inch muffin top pans. Line each muffin cup in the pan with a parchment paper round, butter parchment, and set aside.Cream together butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until combined, 2 to 3 minutes. Add salt, eggs, and vanilla, and beat just until combined.In a small bowl, mix together baking soda and buttermilk. Add flour to mixer, alternating with buttermilk mixture, beginning and ending with flour. In a medium bowl, whisk together cocoa powder and boiling water until smooth. Add to batter and beat until combined.Fill each muffin cup with a heaping 1/4 cup batter. Transfer muffin pans to oven and bake 9 minutes, rotate pans, and continue baking 9 minutes more. Let cool slightly before transferring muffin tops to a wire rack. Let cool completely; remove parchment paper. Repeat process with remaining batter.Place a heaping 1/4 cup filling on the bottom side of half of the muffin tops. Top with remaining muffin tops, bottom side down, to form whoopie pies.

I have some big news to share!!! I am an AUNTIE again!!!!My sil (my brothers wife) had their baby on Wednesday, September 12th, 2007. She is adorable!!! Leah and Olivia are big sisters now :). Here are some photo's of the new baby.

The week just blew by me
I tell you, this week just flew right by for me. I have not even been online to post this past week activities until now...sorry! Tuesday was a day at the dentist because Jillian had a filling pop out. She was a riot when she got the gas before the gum shot! Super giggly...I was cracking up! Thank goodness that is all fixed. I had Emilee home on Wednesday, because a boy pushed her at school and she hit her head hard ((big goose egg bump :( - not a happy day)). Also, on Wednesday was the birth of my new niece Lexi Jo, 7 lbs 14 oz, 19 inches long. Thursday had to run to get Kate from school and take her to lunch, then by Friday Jillian stayed home because she came down with a fever and a really bad sore throat (she had to have gotten this from the dentists office) and on top of all that I have been busy getting all the girls summer clothes packed up and fall clothes out. ((It really is like taking on Mt. Everest with these clothes...lol!)). It is cold here...I almost turned the heat on last night. FREEZING!!! I had frost on the grass today when I opened the blinds. I am not ready for the cold yet. Ugh!!! Oh, and then I have also been busy with the girls soccer games in the evenings, running them back and forth for practices and games, so that made my week buzy right by too. Kate's team took a win yesterday evening!!! We were so happy for her. She started off last night as goaly again and she played awesome! She even was playing against her best friend Holly's team and she did not hold back at all. Very proud of her!!! Jillian's team is also really awesome :). Jill didn't play because she was sick but her team has won all their games so far. Way to go Jillian!!! I did the out to dinner thing last night after Kate's game. We met up with friends and had a fun night. Hit my pillow and Zzzzzzzz right out!














I was up super early today 9/14/07, and caught this wonderful show that Kassie Paiva ((One Life to Live soap star)) hosts called Knit and Crochet Today on PBS. Learned some really great little tips on this show. Also, Kassie makes these amazing hats that are for sale online here http://www.kassiedepaiva.com/4batch_1.html. Today - 9/14/07, I am going to be working on ScrapwithNikki goodies. Check out this awesome kit that I got (see below and click on the link). I LOVE IT!!! Working a little backwards today...lol!
I have been looking for a cute 4th of July Digi Kit since August to scrap some Freedom Hill pictures of the girls and their friend Holly. I actually found a kit at Holly McCaig (funny about the name too! 2 Holly's...lol!) and I got it! Here is the LO:

Carson's Cause
Hi everyone, Today I uploaded my girlfriends site called Carson' s Cause. You can take a peek at the snap shot below:This is my good firend Lori's little guy (photo above), Carson was born with a brain disorder and is totally defying the odds!!! I will let you know when everything is completed for you to view and read. Every time I look at this little guy I just see such miracles coming from his life!!! Our family is so blessed to be friends with Lori, Brad, Carson and Shelby.

While at my buddy Nikki's
I was visiting my friend Nikki's blog space today and caught this Saturday Scrap and Share bug...cough...giggle...scrap! cough...giggle...scrap! cough...giggle...scrap! I had to join on!!! Also, I had to buy the cute Kay Miller Kit that Nikki got too! I just have the most perfect photo's of the girls at Aunt Lisa's pool that I am going to use on this kit. I am in the process of downloading right now!
Nikki, I know that if I went shopping with you it would be so dangerous...lol! Ssshhh...don't tell Eric. LOLOkay, here is my Saturday Scrap n' Share:

Note: the photo kind of looks like Samantha doesn't have a bathing suit top on but she does. It is just hard to see with the size so small below for this LO. Plus the swim top is like a soft pink and it is blending with her skin. Oh, she would go nuts if people thought she was topless...lol!

Starting back up - FINALLY!
I have just been go, go, go, and finally I am able to sit my fanny down and type on my personal blog again. Just so much stuff to tell and no time to tell it all.I have been trying to get the girls all situated with school starting up this week. I can not even belive all the supplies that are needed for all three. What a fortune $ just in school supplies. Well, we got that all straightened out and I think we have everything they need packed up in those wonderful back packs.
Okay, can I do the happy dance now :). HORRAY!!!Friends & Family...go a head and take a guess who's is who's. LOL
This week is going to be nutso for me again but I will stead fast on the words below (see postive words below). The girls have soccer games and those yearly soccer professional pictures will be happening this week. Then Mallie has to get her stitches out of her ear. Our poor dog has just had the worst year. I am still trying to get Digi Accents shopping cart all fixed and ready to roll for next week. Say a prayer for me! Hope to have all the kids fall clothes unpacked in their closets too! I also have to make candles this week. I have to make sure to get my goody package out for wonderful Nikki too! I so wish I had 3 of me. LOL
